Gluten Free Stew with Hot Dogs



Happy Monday!!
Hope everyone is doing well. Mondays are always tough, but today was definitely a difficult day for me. Horrible toothache can make your day a living hell. I tried eating a salad at lunch, but couldn't even finish a quarter of it. For dinner, I decided to make a quick stew that will be easy to eat and will last for several days. I made the stew with hotdogs, because that's how my mom and I used to make such stews all the time. However, it will be absolute delish with chicken or even just veggies.
Ingredients:
3 potatoes (or 2 large), cleaned and cubed
1 onion, diced
3 carrots, sliced
4 garlic cloves, diced
2 portobello mushrooms, chopped
1 tbsp herbs of provence
1 tsp lemon pepper
1 tbsp salt
3 bay leaves
3 GF hot dogs (I used Apple Gate Organic Hot Dogs, which are gluten free and casein free), sliced
Grapeseed oil
3 cups of vegetable stock, pre-heated
chopped parsley (optional)

Preheat the pan to medium high heat and add some grapeseed oil. Add the onion and carrots to the pan and let them cook for about 5 minutes. While they are cooking, add the garlic, herbs of province, lemon pepper and cook for 2 more minutes. Then, add your mushrooms and potatoes. After cooking for 5 minutes or so, add your preheated stock and bay leaves and cook the stew covered for 20 minutes. Then, add the sliced hot dogs and cook for 5 more minutes.


When ready to eat, add some chopped parsley and enjoy!!


This is a perfect meal to make on Sunday night for an upcoming week. Hope you'll like it.

    Have you ever found GF vegetable stock cubes?

  2. Hello! I used organic vegetable broth by "Pacific Natural Foods." Compared to others, it has less "funky" ingredients and it is gluten free. Take a look at their website, so you can see how it looks:

    However, if you have some extra time (Sunday is a perfect opportunity to make something like this), I highly recommend making your own broth. It is not at all complicated and you will have extra, so you can use it in soup, stew etc. Check out my stuffing posting. I made fab mushrooms stock and it turned out great!
