Hello Everyone,
Wanted to write a quick note and share a breakfast recipe
with you. Some time ago, my husband and I were walking in the city and stopped by
this cute French bistro place. I had baked eggs in tomato puree/concoction.
Since I didn’t have many ingredients in the fridge this morning, I decided to re-create this
dish…
Ingredients:
3 garlic cloves, diced
4 tomatoes, chopped
1 red onion, diced
1 shallot, diced
½ tsp salt
½ tsp pepper
¼ tsp red chili flakes
½ tsp zatar
¼ tsp chili powder
Goat Milk Butter (grape seed oil will do)
3-4 eggs
Boil some water first. Pour some boiling water over tomatoes
for a minute or so. This will help you remove the skin from tomatoes. I thought
this process would be necessary, since I was planning to bake the tomatoes and didn't want to bother with baked tomato skin...
Dice the onion and the shallot and start cooking them with
the goat milk butter. Add the garlic and the chili flakes. Make sure not to
burn anything :)
I wanted to add some spices earlier to make sure the spices and garlic would
infuse the butter. Add the diced tomatoes and cook them for couple of minutes.
Don’t forget to add salt and pepper :)
In the meantime, grease a 9” dish and get it ready for the
bake. Heat your oven to 425 degrees.
Remove the pan with the tomato mixture and pour everything
into the baking dish. Make 3-4 pockets for the eggs. Pour the eggs into those
pockets. Add the chili powder and zatar on top and put the dish into the oven.
25 minutes later, you’ve got yourself a breakfast. Check the
eggs to see if the dish will be ready earlier. It will go perfect with some
toast and a hot cup of tea/coffee.
