Gluten Free Potato Latkes



Happy Thursday, Folks!

I hope all of you are well. It has been a good day, but I am definitely happy it is Thursday. I saw some beautiful peonies in Whole Foods today and realized I couldn’t walk away without them. They are my favorite flowers and what are the chances that I can buy them in December?? :) Now, since they are not cheap in December, I had to make a delish dinner with whatever I had at home. With that in mind, the new Gluten Free Potato Latkes were born.

First, I made my Greek Salad, which can be found here
Then, I started working on my latkes. This is what you need to make these puppies :)

2 potatoes, grated
2 carrots, grated
2 eggs
1-2 jalapenos, thinly sliced
1 tsp of lemon pepper
½ tsp of salt
Zest of 1 lime
Juice from ½ lime
5 tbsp of garbanzo bean flour
Vegan sour cream  (optional)
Grapeseed oil

First, grate your potatoes and carrots. Add thinly sliced jalapeno (I used 1, but feel free to add another jalapeno. It was a great surprise in my mouth). Add eggs, spices, zest, lime juice and finally, flour. Mix all the ingredients together and heat your skillet. Add grapeseed oil and using your tablespoon, place the potato mixture on the hot pan. I do not suggest placing more mix than 1 tablespoon, because the latkes would be too big and possibly, undercooked. After 2-3 minutes, flip the latkes and press a little with your spatula to make the potato latkes a little flatter. After two more minutes, remove your latkes.
All my childhood, my mom and I always ate the potato latkes with some sour cream. So that is exactly how I still eat them :) However, we should always, add a salad to our dish, so Greek salad with potato latkes and a dollop of sour cream on top was what made my dinner tonight.
