I wanted to share with you the Gluten Free Zucchini Pasta Salad recipe –
perfect for summer days and is very quick to make.
Ingredients:
Zucchini and/or yellow summer squash
Grape tomatoes
Goat/sheep hard cheese (I used Sheep Pyrenees cheese that I
bought at Fairway)
Salt
Pepper
Lemon juice
Extra Virgin Olive Oil (EVOO)
Fresh Dill
Fresh Dill
If you have a mandoline, slice the zucchs thinly (I sliced
them on 3 mm). Place those thin slices on top of each other and julienne them, to resemble the “pasta.” If you don’t have the madoline, that’s OK as well. Just
slice the veggies as thinly as you can (not paper thin) and julienne them to
make matchsticks.
Prepare the grape tomatoes by slicing them in half. Add
grated cheese, salt, pepper, and chopped dill. Two small zucchs and a small box of grape
tomatoes makes a pretty big bowl of the pasta that can feed 2 people. Juice 1
lemon, and drizzle a little bit of EVOO. Gently mix the ingredients and
serve!
The dish is very refreshing and can be served as a main dish or just a
side dish. It really depends how many tomatoes or how much cheese you want to add, so use your best judgement.
Just remember – do not make this too far in advance because
the dish will become watery. When it comes to squashes and zucchinis, use them
right before serving.
