Heirloom Tomato Feta Salad


Hi All,
Hoping for a warmer weather again, I threw this salad quickly and it turned out fantastic. I suggest using heirloom tomatoes because the flavor of those tomatoes is just outstanding. When it comes to summer, I cannot resist buying heirloom tomatoes any chance I get.

Ingredients:
2 large tomatoes (or 1 huge heirloom one)
1/2 onion, thinly sliced (If you have a mandoline, I suggest using it)
1.5 tbsp of good quality extra virgin olive oil (EVOO)
pinch of salt
pinch of pepper
1 - 1.5 tbsp of mixed cilantro, mint, tarragon, dill (if you are missing one don't worry, but I do recommend a mixture of greens)
1/4 cup of sheep's feta, cubed or crubmled

Cut the tomato in larger pieces, add thinly sliced onion, salt and pepper, and EVOO. Add feta and gently mix. Taste to make sure you don't need extra salt and enjoy.
This salad was so simple and delicious that even my husband, who doesn't really love tomatoes, devoured it.
